Tube is a minty green oasis on the fringe of Portland’s Chinatown district. For those who hate the downtown bar scene for its meat market atmosphere and lack of imagination, Tube delivers something fresh. The layout is a bit intimidating at first and will have you feeling a little claustrophobic; however, an amazing selection of vegan eats and a drink named after Mohinder, will quickly have you calling it home.

How long have you been a bartender?
Seven years.

What’s different about Tube compared with other bars?
One thing is the fact that most of our drinks are whiskey-based as opposed to vodka. We’re all whiskey drinkers here. That and the vegan menu.

What was the impetus in deciding to serve vegan food?
Mikey, my assistant manager, is vegan and that was the crowd we wanted to cater to. For the amount of kids in town that are vegan there’s a real lack of vegan eateries, especially downtown.

What’s your favorite drink to make here?
Probably the "Diamond Dogs," just because it’s so distinct on account of the muddled ginger. It’s the only one I kept from our old menu.

What’s the biggest selling drink?
This is Portland... it’s Pabst.
