Plain sweet knafeh
Recipe from Knaffe Noga
40 grams samnah or butter
100 grams kadaif noodles
Two pinches of ground pistachios
3 oz. sugar
70 grams cheese: Mix sweet cheese (you can make your own combination using ricotta/ cottage cheese/buffalo mozzarella) and salty white cheese that is medium-hard in texture and cut into cubes (you can use authentic jibneh cheese, or feta). The salty cheese must be soaked overnight in lots of water until it loses its salty taste.
Preheat oven to 375 degrees.
Butter a 6”-by-6” roasting tray well.
Separate kadaif noodles and sprinkle onto tray, making an even layer.
Crumble cheese mix on top of kadaif hairs.
Place in lower part of oven. After 10 minutes, check the browning of the kadaif noodles by lifting them gently with knife. If color is not yet golden brown, put back in the oven for further 5 minutes.
While knafeh is cooking, make sweet syrup by heating 1 part water to 1 part sugar until sugar has melted completely.
When knafeh is ready, remove from oven, place a plate over top of tray, and flip over. Pour hot syrup over knafeh and finish with a sprinkle of ground pistachio.
