Dried Apricots with Goat Cheese and Mint

Dried Apricots with Goat Cheese and Mint, adapted from Hanoch Bar Shalom

10 dried apricots
10 mint leaves
3 1/2 oz. goat cheese
3 tbsp. olive oil
1 tsp. balsamic vinegar
ground pepper to taste

Cut an incision in apricots with a sharp knife to create small pockets. Stuff each first with one mint leaf, and then with a touch of goat cheese. Meanwhile, mix olive oil and balsamic vinegar. Pour sauce over the apricots and top with freshly ground pepper. Serve immediately.
