El-Babur’s Knafeh

4 oz. kadaif noodles
4 Tbsp. soft butter
1/2 cup sweet goat cheese or mozzarella (crumbled)
1 cup of sugar syrup (boil the same amount of sugar and water until you get thick syrup)
4 Tbsp. ground pistachio nuts

Spread the butter on a round frying pan.

Cover it with the kadaif noodles and sprinkle them with the crumbled cheese. Cook on a low flame and move the pan in a circular motion to avoid sticking.

Use a knife to check the bottom of the knafeh from time to time and continue cooking until the bottom is golden.

Turn the knafeh over on a round plate (the same size as the pan) while still hot, and pour the syrup over it. Don’t drown the knafeh in syrup—it’s supposed to stay crispy.

Sprinkle it with the ground pistachio nuts and serve immediately.

Makes 4 servings.
