Ingredients
- 1cup cottage cheese
- ¼cups sour cream (you can use low-fat or Greek yogurt)
- 1egg
- 4Tbsp maple or agave syrup
- 1Tbsp lemon juice
- 1Tbsp vanilla
- ½Tbsp. protein powder
Yield: 6 cupcakes
Preparation
- Step 1
Combine all ingredients in a blender and blend until smooth.
- Step 2
Pour into jumbo cupcake cups (should fill six) and bake for 20 minutes at 375 degrees or until the center jiggles slightly when you shake it.
- Step 3
Refrigerate until it’s cold, and eat. It also freezes well.
