These spicy little cookies, called petit fours au gingembre in Morocco, are similar to macaroons. They’re gluten-free and very quick and easy to prepare. Traditionally, they are prepared for Purim and Passover.
Ingredients
- 1 ½ cups ground almonds
- ¾cup superfine sugar
- 3egg whites
- ¼tsp cream of tartar
- 2teaspoons ground ginger
- ¼teaspoon ground cinnamon
- About 30 split blanched almonds
Yield: about 30 cookies
Preparation
- Step 1
Place the ground almonds, sugar, and spices in a bowl and mix well.
- Step 2
In another bowl, whisk the egg whites with the cream of tartar to stiff peaks, then gently fold in the ground almond mixture.
- Step 3
Drop heaped teaspoonfuls of the mixture on a baking sheet lined with baking parchment, leaving enough room for the cookies to spread slightly, then top each with a split almond.
- Step 4
Bake in a preheated 350 degree oven for 12 to 15 minutes or until pale golden. Remove from the oven and set aside to cool and harden.
