Ingredients
For the Brisket
- 2lbs oyster mushrooms
- 2Tbsp olive oil
- 2tsp garlic powder
- ½Tbsp smoked paprika
- ¼tsp sea salt
- ¼tsp black pepper
For the Sauce:
- 1cup prunes
- 1cup water
- ¼cup red wine vinegar
- 2Tbsp tomato paste
- 2cloves garlic
- 1shallot, peeled and roughly chopped
- Pinch sea salt and pepper, to taste
Yield: 4 servings
Preparation
To make the Brisket

Use two forks to shred the mushrooms. Drizzle with olive oil, garlic powder, paprika, sea salt and black pepper. Roast for 20-25 minutes, or until the mushrooms begin to dry out and become golden.
To make the Sauce:

Meanwhile, combine all sauce ingredients in a blender until smooth. Pour into a saucepan over medium heat, bring to a boil, and reduce to simmer for 20 minutes while the mushrooms cook.
- Step 2
Remove mushrooms from the oven and pour sauce over top. Bake for an additional 30 minutes.
