Artichoke Tortino

A tortino is a little pie made with cheese or vegetables that may be baked in the oven or fried on top of the stove. This one is a traditional Florentine specialty much loved by Italian Jews, especially those from Pitigliano in Tuscany. It is made with fried artichoke bottoms dredged in flour, topped with a mixture of beaten eggs, milk, and Parmesan cheese and baked in the oven. It is very quick and easy to prepare using thawed frozen artichoke bottoms.

Ingredients

  • 8 or 9frozen artichoke bottoms, thawed
  • Flour for dredging
  • olive oil for shallow frying
  • 3eggs
  • ½cup milk or half & half
  • A grating of nutmeg
  • Salt
  • Freshly ground black pepper
  • 3tbsp freshly grated Parmesan cheese
Yield: 3 to 4 servings

Preparation

  • Step 1

    Cut the artichoke bottoms in half or quarters, then slice them thinly. Dredge in flour, then shallow fry in hot olive oil until they are tender and golden on both sides. Drain on paper towels.

  • Step 2

    In a large bowl, beat the eggs, milk, and Parmesan cheese and season with nutmeg, salt, and black pepper.

  • Step 3

    Arrange the artichoke bottoms in the bottom of a well-oiled, shallow baking dish and pour over the egg mixture. Bake in a preheated 350 degree oven for 35 to 40 minutes or until the eggs are set and the top is golden. Serve hot.
